This is a good idea that you have come up with!  

For restrooms...would there be gas stations, stores, or places
that we could use, so that we wouldn't even have to stop at
the rest stops that are part of the registered ride?
(I ask since I'm not familiar with LI).
I would think that if there are places...we could all bring or buy
our water and food along the way!  

I'm sure you know....on the ride this past Sunday,
there were marshals telling people without the 
green vest to get off the "course".  Would that be 
a problem on this ride?  Or does it attract so many
less people  that it's not an issue?  I'd be upset if I
drove all this way, and had this happen somewhere 
along the way.
