Joel,
Do you plan to bike or drive to the shore? I've biked from Bedminster to Belmar several times and have a pretty nice 56 mile route mapped out over mostly back roads. Belmar is close to Ocean Grove, which has a lot of quaint B&B's and would be a good place to stay. From there, you can ride north along the shore to Sandy Hook and/or?south to Seaside Heights and Island Beach State Park. Seaside Heights is also a fun place to stay - if you don't mind a little tacky. There's a cycling map of Monmouth county that you might find useful.
The other alternative is to do the southern strip from Cape May to just north of Atlantic City, but I personally prefer the northern strip from Sandy Hook to Seaside.
